Ingredients
- 4 large russet potatoes, cooked and cubed
- 1/4 cup sour cream
- 1/4 cup chopped green onions

Instructions
- Prepare the Potato Mixture: Mash the cooked potatoes and mix them with sour cream, green onions, salt, and pepper.
- Form the Sticks: Shape the potato mixture into small balls, press a strip of cheddar cheese inside each one, and seal the mixture around the cheese to form sticks.
- Coat the Sticks: Dredge each potato ball in flour, dip in beaten egg, and coat with a mixture of panko breadcrumbs and cornstarch.
- Fry the Sticks: Heat oil to 350°F (180°C) and fry the potato sticks for about 3 minutes per side, or until golden brown.
