These Air Fryer Peanut Butter Cookies are a perfect blend of rich peanut butter and crispy edges with a chewy center. They’re quick and easy to prepare, requiring only a few ingredients and an air fryer for a crispy texture, all in under 20 minutes!

Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Prepare the Dough:
    • In a mixing bowl, combine the peanut butter, granulated sugar, brown sugar, and egg. Mix until smooth and creamy.
    • Add baking soda, vanilla extract, and a pinch of salt. Stir until all ingredients are well incorporated.
  • Shape the Cookies:
    • Roll the dough into 1-inch balls and place them on a piece of parchment paper or a silicone baking mat.
    • Use a fork to gently press down on each ball to flatten it slightly and create a crisscross pattern on top.
  • Air Fry the Cookies:
    • Preheat your air fryer to 350°F (175°C) for 3 minutes.
    • Place the shaped cookies in the air fryer basket, ensuring they are spaced apart.
    • Air fry at 350°F (175°C) for 8-10 minutes, or until the edges are golden brown.
  • Cool:
    • Remove the cookies from the air fryer and transfer them to a wire rack to cool completely. This step helps the cookies set before serving
