Crispy on the outside and tender on the inside, these Air Fryer Zucchini Fritters are a light and flavorful way to enjoy zucchini. Air-frying minimizes oil use, making them a healthier alternative to traditional fried fritters. Perfect as a snack, appetizer, or side dish, these fritters are quick, easy, and family-friendly!

Ingredients

  • 2 medium zucchini, grated
  • 1 tsp salt (to remove moisture)
  • 1 large egg, beaten
  • ½ cup grated Parmesan cheese
  • ½ cup Panko breadcrumbs
  • ¼ cup all-purpose flour
  • 1 clove garlic, minced
  • ½ tsp baking powder
  • ¼ tsp black pepper
  • Cooking spray or olive oil, for brushing

Instructions

Prepare the Zucchini:

  1. Grate zucchini using a box grater.
  2. Place grated zucchini in a colander over the sink. Sprinkle with salt and let sit for 10 minutes.
  3. After 10 minutes, squeeze out as much liquid as possible using a kitchen towel or cheesecloth.

2. Mix the Batter:

  1. In a large bowl, combine:
    • Drained zucchini
    • Beaten egg
    • Parmesan cheese
    • Panko breadcrumbs
    • All-purpose flour
    • Minced garlic
    • Baking powder
    • Black pepper
  2. Stir until well combined and the mixture holds together.

3. Form the Fritters:

  1. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  2. Scoop 2 tbsp of the mixture and shape into small patties.
  3. Repeat until all the mixture is used.

4. Cook the Fritters:

  1. Lightly spray or brush the air fryer basket with cooking oil.
  2. Place fritters in a single layer (do not overcrowd).
  3. Lightly spray or brush the tops with oil to enhance crispiness.
  4. Air fry at 375°F (190°C) for 10 minutes.
  5. Flip and air fry for another 5-7 minutes, until golden brown & crispy.

5. Serve & Enjoy:

  1. Let fritters cool slightly before serving.
  2. Serve warm with dipping sauce (such as tzatziki, sour cream, or marinara).
