Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup Baileys Irish Cream

Instructions

  • Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

  • Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture is evenly moistened. Press the mixture into the bottom of the prepared springform pan, compacting it with a spoon. Bake for 8-10 minutes, then set aside to cool.

  • Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and Baileys Irish Cream. Gently fold in mini chocolate chips.

  • Bake the Cheesecake: Pour the cheesecake batter into the cooled crust and spread evenly. Bake for 50-60 minutes, or until the center is set and the top is lightly golden (it may still jiggle slightly). Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

  • Chill the Cheesecake: After cooling in the oven, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to let the flavors set.

  • Serve and Garnish: Before serving, remove the cheesecake from the springform pan. Top with whipped cream, chocolate shavings, extra mini chocolate chips, and a drizzle of Baileys Irish Cream.
