Ingredients

For the Fritter Bites:

  • 1 cup all-purpose flour

  • 12 tbsp milk
  • 1/2 tsp vanilla extract (optional)

Instructions

  • Prepare the Fritter Bites: Preheat oven to 375°F (190°C). Grease or line a mini muffin tin.
  • Mix Dry Ingredients: Whisk together flour, sugar, baking powder, salt, and cinnamon (if using) in a medium bowl.
  • Combine Wet Ingredients: Whisk milk, egg, vanilla extract, and melted butter in another bowl until smooth.
  • Fold in Blueberries: Gently fold wet ingredients into dry ingredients, followed by the blueberries. Be careful not to overmix.
  • Scoop and Bake: Spoon the batter into the muffin tin, filling each cup about 3/4 full. Bake for 12-15 minutes, or until golden and a toothpick comes out clean.
  • Cool the Fritter Bites: Let cool for 5 minutes in the tin, then transfer to a wire rack.
  • Prepare the Glaze: Mix powdered sugar, milk, and vanilla extract (if using) in a small bowl until smooth.
  • Drizzle the Glaze: Once cooled, drizzle the glaze over the fritter bites.
  • Serve and Enjoy: Let the glaze set before serving.
