Baked Eggs Napoleon is a delicious and easy breakfast dish featuring creamy baked eggs, crispy potatoes, and melted cheese, all baked in individual ramekins. With a customizable mix of vegetables and seasonings, this dish is perfect for busy mornings, brunch, or a protein-packed start to your day.

Ingredients

  • 12 cooked tater tots, crumbled (or 1 cup of cooked hash browns)
  • 1 teaspoon butter
  • 1 tablespoon jalapeño, seeded and finely diced (optional)
  • ¼ cup sweet onion, diced
  • 1 clove garlic, minced
  • ¼ cup mozzarella cheese, shredded
  • 2 large eggs
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • Sauté vegetables – In a small skillet over medium-high heat, melt the butter. Add the diced onion and jalapeño, cooking for 3-5 minutes until softened. Stir in the minced garlic and cook for another minute.
  • Prepare ramekins – Lightly grease two small ramekins with non-stick spray. Divide the crumbled tater tots evenly between them.
  • Add vegetables & cheese – Evenly distribute the sautéed vegetables over the potatoes and sprinkle the shredded mozzarella cheese on top.
  • Add eggs – Create a small indentation in the center and crack an egg into each ramekin. Season with salt and pepper.
  • Bake for 5 minutes on the middle rack.
  • Broil on high for 5-6 minutes, or until the eggs are set to your liking.
  • Rest & serve – Let the ramekins sit for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • For added flavor, mix in diced bell peppers, spinach, or mushrooms.
  • Cheese variations – Swap mozzarella for cheddar, feta, or goat cheese.
  • Storage – Refrigerate leftovers for up to 2 days. Reheat in the microwave for 1-2 minutes or in a 350°F oven until warmed through.
