Baked Potato Chicken and Broccoli is a hearty, cheesy, and satisfying meal that combines crispy baked potatoes with a creamy filling of shredded chicken, tender broccoli, and melted cheddar cheese. Ingredients

  • 4 large russet potatoes, washed and pricked with a fork
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • ½ cup sour cream (or Greek yogurt for a lighter option)
  • ½ cup milk
  • 1 cup cheddar cheese, shredded
  • ¼ cup green onions, chopped
  • Extra cheese and green onions for garnish

Instructions

  1. Bake the Potatoes

    • Preheat oven to 400°F (200°C).
    • Rub potatoes with olive oil, season with salt and pepper, and place on a baking sheet.
    • Bake for 1 hour, until tender.
  2. Prepare the Filling

    • Let the baked potatoes cool slightly.
    • Cut a slit on top and scoop out the inside, leaving a thin layer to hold the structure.
    • In a bowl, mix the scooped potato, shredded chicken, broccoli, sour cream, milk, cheese, and green onions.
    • Season with salt and pepper to taste.
  3. Stuff the Potatoes

    • Spoon the filling back into the potato skins.
    • Sprinkle extra cheese on top.
  4. Bake Again

    • Return to the oven and bake for 20 minutes, until the cheese is melted and bubbly.
  5. Garnish and Serve

    • Top with additional green onions and serve warm.
