This easy recipe locks in moisture and flavor, creating a perfect dish with minimal cleanup. Ideal for weeknight dinners, special occasions, or a light, healthy meal, it’s a crowd-pleasing choice that’s both delicious and simple to prepare.

Ingredients

  • 4 salmon fillets (about 6 oz each)

  • 1 bunch of asparagus, trimmed

  • 2 tbsp olive oil

  • 1 lemon, sliced

  • 2 cloves garlic, minced

  • Salt and freshly ground black pepper, to taste

  • 1 tsp dried thyme or fresh thyme sprigs

  • Fresh parsley, for garnish (optional)

Instructions

  • Preheat the Oven:
Preheat your oven to 400°F (200°C).

  • Prepare the Foil Packets:
Cut four large pieces of aluminum foil, enough to wrap each salmon fillet and asparagus.

  • Assemble the Packets:
Place each salmon fillet in the center of a piece of foil and arrange the trimmed asparagus around it.

  • Season the Salmon and Asparagus:
Drizzle the olive oil over the salmon and asparagus.
Sprinkle the minced garlic, dried thyme (or fresh sprigs), salt, and pepper on top.
Add a few slices of lemon on top for extra citrus flavor.

  • Seal the Foil Packets:
Fold the sides of the foil over the salmon and asparagus, sealing the packet tightly to lock in moisture.

  • Bake:
Place the foil packets on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The asparagus should be tender but still slightly crisp.

  • Serve:
Carefully open the foil packets (beware of hot steam) and transfer the salmon and asparagus to plates. Garnish with fresh parsley and extra lemon slices, if desired.

Notes

  • Vegetable Variations: Add or swap vegetables like green beans, broccoli, or zucchini for variety.

  • Spicy Kick: Sprinkle red pepper flakes over the salmon or drizzle with hot sauce for an extra kick.

  • Butter Option: Add a small pat of butter on top of the salmon before sealing the foil for extra richness.
