Ingredients

For the cake:

  • 23 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  • Prepare the wet ingredients: In a large bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter, sugar, egg, and vanilla extract. Mix well until everything is fully incorporated.
  • Add the dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Gradually add the dry ingredients to the wet ingredients and stir just until combined. Be careful not to overmix.
  • Optional mix-ins: If you’re adding nuts or chocolate chips, fold them into the batter.
  • Bake: Pour the batter into the prepared loaf pan and spread it out evenly. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, tent it with aluminum foil during the last 10-15 minutes of baking.
  • Cool and serve: Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

  • Add-ins: Add chocolate chips, chopped walnuts, pecans, or dried fruit (such as raisins or cranberries) to the batter for extra flavor and texture.
  • Gluten-free: Use a gluten-free flour blend in place of all-purpose flour to make this recipe gluten-free.
  • Vegan: Replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 2.5 tablespoons water) and use a dairy-free butter substitute.
  • Spices: Add a pinch of nutmeg, or use allspice instead of cinnamon for a different flavor profile.
