Banana Cream Cheese Bars combine the natural sweetness of ripe bananas with a creamy, tangy cream cheese filling in this easy-to-make dessert. Ingredients

For the Banana Base:

  • 2 ripe bananas, mashed

  • 1/2 cup (115g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups (180g) all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

For the Cream Cheese Filling:

  • 8 oz (225g) cream cheese, softened

  • 1/4 cup (50g) granulated sugar

  • 1 tsp vanilla extract

  • 1 large egg

Instructions

  • Preheat the Oven and Prepare the Pan:
    Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch square baking pan with parchment paper.

  • Make the Banana Base:
    In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
    Beat in the mashed bananas, eggs, and vanilla extract until fully combined.
    In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
    Pour the banana batter into the prepared baking pan and spread evenly.

  • Make the Cream Cheese Filling:
    In a separate bowl, beat the softened cream cheese and sugar until smooth and creamy.
    Add the egg and vanilla extract, and continue beating until fully combined.
    Pour the cream cheese mixture over the banana batter, spreading it evenly on top.

  • Bake the Bars:
    Bake for 30–35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean (a few moist crumbs are fine).
    Remove from the oven and allow the bars to cool completely in the pan before cutting into squares.

  • Serve:
    Once cooled, cut into squares and serve. Optionally, refrigerate the bars for an hour before cutting for cleaner slices.

Notes

  • Chocolate Chips: Add chocolate chips to the banana batter for a chocolate-banana twist.

  • Nutty Touch: Add chopped walnuts or pecans to the banana mixture for added texture and flavor.
