Ingredients

For the crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 3 ripe bananas, mashed
  • 3 tablespoons lemon juice
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour

For the fruit topping:

  • 1 1/2 cups chopped strawberries

Instructions

  • Prepare the Crust:
    Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  • Make the Cheesecake Filling:
    Beat cream cheese until smooth, then add sugar, eggs, and vanilla extract. Mix in flour, sour cream, and mashed bananas until well combined.

    Arrange sliced bananas and strawberries on top of the filling, gently pressing them in.

    Bake the cheesecake at 325°F for 60 minutes, until the edges are set and the center is just slightly wobbly.
  • Cool and Refrigerate:
