Ingredients

For the Cake:

  • 2 cups semolina
  • 1 cup sugar
  • 1 cup plain yogurt
  • ½ cup unsalted butter, melted
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup shredded coconut (optional)
  • 1 teaspoon vanilla extract
  • ¼ cup almonds or blanched almonds (for topping)

For the Syrup:

  • 1 ½ cups sugar
  • 1 cup water
  • 1 teaspoon lemon juice
  • 1 teaspoon rose water or orange blossom water

Instructions

Making the Cake:

  1. Preheat & Prep: Preheat oven to 350°F (175°C) and grease a 9×9-inch or round baking pan.
  2. Mix Dry Ingredients: In a bowl, combine semolina, sugar, baking soda, baking powder, and coconut (if using).
  3. Add Wet Ingredients: Stir in yogurt, melted butter, and vanilla extract. Mix until well combined.
  4. Let it Rest: Allow the batter to sit for 10-15 minutes so the semolina can absorb moisture.
  5. Transfer to Pan: Spread the batter evenly in the greased baking pan.
  6. Score & Add Almonds: Lightly score the top into diamond or square shapes, then place an almond in the center of each piece.
  7. Bake: Bake for 30-35 minutes, or until golden brown.

Making the Syrup:

  1. Prepare Syrup: While the cake bakes, combine sugar, water, and lemon juice in a saucepan. Bring to a boil, then simmer for 5-7 minutes.
  2. Add Flavor: Remove from heat and stir in rose water or orange blossom water.

Final Assembly:

  1. Soak the Cake: Pour the warm syrup evenly over the hot cake as soon as it comes out of the oven.
  2. Let it Absorb: Allow the syrup to soak in for at least 30 minutes before serving.
  3. Slice & Serve: Cut along the scored lines and enjoy!
