These Beef Birria Quesa Tacos are packed with slow-cooked, tender beef, stuffed into cheese-filled, crispy corn tortillas, and served with rich, flavorful consomé for dipping. Ingredients

For the Consomé:

  • 2 cups reserved sauce from beef birria
  • 1 cup chicken broth
  • ¼ cup diced carrots
  • ¼ cup diced celery
  • ½ cup diced cabbage

For the Tacos:

  • 3 tablespoons reserved beef fat (from beef birria)
  • 8 (5-inch) corn tortillas
  • 2 cups freshly grated Monterey Jack cheese
  • 2 cups shredded beef birria
  • Chopped white onion and fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

Prepare the Consomé:

  1. In a saucepan, combine reserved birria sauce, chicken broth, carrots, celery, and cabbage.
  2. Bring to a simmer over medium heat and cook until vegetables are tender (about 20 minutes).

Heat the Tortillas:

  1. In a large skillet over medium heat, melt reserved beef fat.
  2. Lightly dip each tortilla into the consomé to coat, then place in the skillet.

Assemble the Tacos:

  1. Sprinkle cheese on each tortilla, followed by shredded beef birria.
  2. Top with chopped onion and cilantro, then fold tortillas in half.

Cook the Tacos:

  1. Cook each taco until cheese melts and tortillas are golden and crispy (about 2-3 minutes per side).

Serve:

  1. Ladle warm consomé into bowls, garnish with onion and cilantro, and serve alongside the tacos.
  2. Serve hot with lime wedges for extra zest!
