Ingredients

  • 2 sheets of square puff pastry
  • 2 tablespoons honey
  • 100 grams crumbled blue cheese
  • 100 grams grated Parmesan cheese
  • 50 grams chopped walnuts
  • 68 sprigs fresh thyme leaves
  • 1 tablespoon milk
  • Sea salt and freshly cracked black pepper, to taste

Instructions

  • Preheat the Oven:

    • Set your oven to 180°C (350°F). For non-fan forced ovens, increase the temperature to 200°C (390°F).
  • Prepare the Puff Pastry:

    • Lay out the puff pastry sheets on a lightly floured surface.
    • Drizzle 1 tablespoon of honey over each sheet, spreading it evenly.
  • Add Fillings:

    • Evenly distribute the chopped walnuts, crumbled blue cheese, and grated Parmesan over each pastry sheet.
    • Sprinkle fresh thyme leaves on top and season with sea salt and cracked black pepper.
  • Roll and Slice:

    • Tightly roll each pastry sheet from the bottom edge.
    • Slice each roll lengthwise into two equal halves. Gently press the cut edges together to contain the filling.
  • Twist and Shape:

    • On a baking sheet lined with parchment paper, carefully twist each pastry strip and form them into round coils, pinching the ends to secure.
  • Bake:

    • Brush the pastry coils with milk to achieve a golden finish.
    • Bake for 25-30 minutes, or until the pastry is puffed and golden brown.
  • Serve:

    • Remove from the oven, sprinkle with additional thyme leaves, and serve warm.
