Ingredients

For the Blueberry Jam:

  • 1 cup fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

For the Cookie Dough:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar (plus extra for topping)
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

Step 1: Prepare the Blueberry Jam

  1. In a medium saucepan, combine blueberries, 2 tablespoons of sugar, lemon juice, and vanilla extract.
  2. Cook over medium-low heat, stirring occasionally, until the mixture thickens to a jam-like consistency (about 30-40 minutes).
  3. Remove from heat and let the jam cool completely before using.

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3: Cream Butter & Sugar

  1. In another mixing bowl, beat the softened butter and 3/4 cup granulated sugar with an electric mixer on high speed until light and fluffy (about 2 minutes).

Step 4: Incorporate Egg & Vanilla

  1. Add the egg and vanilla extract to the butter-sugar mixture. Mix on medium speed until well combined.

Step 5: Combine Wet & Dry Ingredients

  1. Gradually mix the dry ingredients into the wet mixture, stirring on low speed until just combined. Do not overmix.

Step 6: Fold in Blueberry Jam

  1. Gently fold the cooled blueberry jam into the dough, creating swirls throughout.

Step 7: Shape & Bake

  1. Scoop the dough into 2-tablespoon-sized balls and place them on a parchment-lined baking sheet, spacing them apart.
  2. Lightly sprinkle the tops with sugar for extra texture.
  3. Bake in a preheated oven at 350°F (175°C) for 12-15 minutes, until the edges are set and lightly golden while the centers remain soft.

Step 8: Cool & Serve

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
