Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, lightly beaten
  • ⅓ cup whole milk
  • 2 teaspoons pure vanilla extract
  • Juice of 1 medium lemon
  • Zest of 2 large lemons
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups fresh blueberries
  • 1 cup cream cheese, cut into small cubes

Instructions

Preheat the Oven:

  • Preheat oven to 350°F (176°C).
  • Grease a 9×5-inch loaf pan with butter or non-stick spray.

2. Mix Wet Ingredients:

  • In a medium bowl, cream together butter and sugar until light and fluffy.
  • Add eggs, milk, vanilla extract, lemon juice, and lemon zest. Mix until smooth.

3. Prepare Dry Ingredients:

  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • Create a well in the center for wet ingredients.

4. Combine Wet and Dry Ingredients:

  • Pour the wet mixture into the dry ingredients.
  • Gently mix until just combined (avoid overmixing).

5. Fold in Blueberries and Cream Cheese:

  • Carefully fold in blueberries and cream cheese cubes for even distribution.

6. Transfer to Loaf Pan & Bake:

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60–70 minutes, or until a toothpick comes out clean.

7. Cool & Serve:

  • Let the loaf cool in the pan for 20 minutes.
  • Transfer to a wire rack to cool completely before slicing.
