Bonfire Bars are a delicious, easy-to-make dessert that brings all the flavors of s’mores into a convenient bar form. With a graham cracker crust, gooey marshmallow layer, and rich chocolate topping, these bars are the perfect combination of crispy, chewy, and indulgent. Whether you’re craving a nostalgic treat or need a crowd-pleasing dessert, Bonfire Bars are sure to be a hit!

Ingredients

  • m cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Marshmallow Layer:

  • 1 (10 oz) bag mini marshmallows

For the Chocolate Topping:

  • 1 ½ cups semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • ¼ teaspoon vanilla extract (optional)

Instructions

    • Prepare the Crust:

      • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
      • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and the crumbs are evenly coated.
      • Pour the graham cracker mixture into the prepared baking dish and press it firmly into the bottom to form an even crust. Bake in the preheated oven for 10 minutes. Once done, remove from the oven and set aside.
    • Add the Marshmallow Layer:

      • Evenly sprinkle the mini marshmallows over the baked graham cracker crust. Return the pan to the oven and bake for an additional 5-7 minutes, or until the marshmallows have puffed up and are lightly golden brown.
    • Prepare the Chocolate Topping:

      • While the marshmallows are baking, place the chocolate chips and butter in a heatproof bowl. Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth. Alternatively, melt the chocolate in a double boiler.
      • Stir in vanilla extract, if desired.
    • Top with Chocolate:

      • Once the marshmallows are done, remove the pan from the oven. Pour the melted chocolate over the marshmallow layer, spreading it evenly with a spatula to cover all of the marshmallows.
    • Cool and Slice:

      • Allow the bars to cool to room temperature. For quicker cooling, place the pan in the refrigerator for about 30 minutes.
      • Once the chocolate has set, slice the bars into squares or rectangles and serve.

Notes

  • Nutty Bonfire Bars: Add chopped nuts, such as walnuts or pecans, to the graham cracker crust for extra texture.
  • Peanut Butter Bonfire Bars: Spread a layer of peanut butter on top of the graham cracker crust before adding the marshmallows for a delicious twist.
  • S’mores Flavor: Add some crushed-up chocolate cookies or extra chocolate bars to the graham cracker crust for an extra s’mores flavor.
