Fresh pineapple is coated in a buttery brown sugar glaze with hints of cinnamon and vanilla, then grilled to perfection. Enjoy it on its own, with ice cream, or as a topping for grilled meats!

Ingredients

  • 1 fresh pineapple, peeled, cored, and cut into spears or rings
  • ½ cup brown sugar
  • ¼ cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract (optional)
  • A pinch of cayenne pepper (optional, for spice)

Instructions

Prepare the Pineapple:

  • Slice pineapple into spears or rings and place in a large bowl or shallow dish.

2. Make the Glaze:

  • In a bowl, whisk together melted butter, brown sugar, cinnamon, vanilla extract, and cayenne (if using).

3. Marinate the Pineapple:

  • Pour the glaze over the pineapple, ensuring each piece is well coated.
  • Let sit for 15-30 minutes to absorb the flavors.

4. Preheat the Grill:

  • Heat grill to medium-high heat (350°F-400°F / 175°C-200°C).
  • Lightly oil grill grates to prevent sticking.

5. Grill the Pineapple:

  • Place pineapple directly on the grill grates.
  • Grill for 3-5 minutes per side, until caramelized and grill marks appear.

6. Serve & Enjoy:

  • Remove from the grill and serve warm.
  • Optionally garnish with cinnamon, fresh mint, or a drizzle of caramel sauce.

Notes

  • For a lighter option, replace butter with coconut oil.
  • Want a citrus twist? Add 1 tablespoon orange or lime juice to the glaze.
  • Watch carefully while grilling to prevent the sugar from burning.
