Ingredients

Instructions

  • Prepare the Chicken:

    • Season the chicken breasts with olive oil, garlic powder, oregano, salt, and pepper.

    • Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F or 74°C).

    • Remove from heat and set aside to rest while you prepare the bruschetta topping.

  • Make the Bruschetta Topping:

    • In a medium bowl, combine halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Stir gently to combine.

    • Let the mixture sit for about 5-10 minutes to allow the flavors to meld together.

  • Assemble the Dish:

    • Place the cooked chicken breasts on serving plates and spoon the bruschetta mixture generously over the top.
