Burrata Bruschetta is a fresh, vibrant twist on the classic Italian appetizer, featuring creamy burrata cheese, juicy tomatoes, fresh basil, and a drizzle of balsamic glaze, all served on crispy toasted bread. Ingredients

For the bread:

  • 1 loaf of rustic baguette or ciabatta bread

For the filling:

  • 1 ball of burrata cheese (about 8 oz)

  • 1 1/2 cups cherry or grape tomatoes, halved

  • 1/4 cup fresh basil leaves, chopped

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic glaze (or balsamic vinegar)

  • Salt and pepper, to taste

  • 1 clove garlic, halved (optional, for rubbing on the bread)

Instructions

  • Toast the Bread:

    • Preheat your oven to 400°F (200°C). Slice the bread into 1/2-inch thick pieces and place them on a baking sheet. Drizzle with olive oil and toast for 5-7 minutes until golden brown and crispy. Optionally, rub the cut sides of the toasted bread with garlic for added flavor.

  • Prepare the Tomato Mixture:

    • In a small bowl, combine the halved cherry tomatoes with chopped basil. Drizzle with 1 tablespoon olive oil and season with salt and pepper. Gently toss to combine.

  • Assemble the Bruschetta:

    • Place a generous spoonful of the tomato mixture on each piece of toasted bread. Gently tear or slice the burrata cheese and place it on top of the tomatoes.

  • Finish with Balsamic Glaze:

    • Drizzle balsamic glaze over the burrata and tomato mixture. Optionally, add a little more olive oil or fresh cracked black pepper for extra flavor.

  • Serve:

    • Serve immediately while the bread is still warm and crispy. Enjoy as a delicious appetizer or light snack.
