Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar (for dusting)

Instructions

  • Preheat the Oven: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Make the Dough: In a stand mixer, cream together softened butter and 1/2 cup powdered sugar until light and fluffy. Reduce speed and add salt, vanilla, flour, and chopped pecans. Mix until a dough forms.
  • Shape the Cookies: Roll dough into 1-inch balls and place them a few inches apart on the baking sheets.
  • Bake: Bake for 11 minutes or until the bottoms are lightly golden. Do not overbake.
  • First Powdered Sugar Coating: Let cookies cool slightly. Roll them in powdered sugar while still warm. Transfer to a cooling rack.
  • Second Powdered Sugar Coating: Once fully cooled, roll them in powdered sugar again for a thick, snowy coating.
