Ingredients

  • 4 large russet potatoes, peeled and sliced
  • 1 cup Caesar dressing (store-bought or homemade)
  • 1 cup sour cream
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1/4 cup croutons, crushed (optional, for topping)

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish or similar casserole dish with cooking spray or butter.
  • In a large mixing bowl, combine Caesar dressing, sour cream, shredded Parmesan, mozzarella, milk, garlic powder, salt, and pepper. Mix until smooth and well combined.
  • Add sliced potatoes to the bowl and toss to coat evenly with the creamy mixture.
  • Pour the potato mixture into the prepared baking dish, spreading the potatoes into an even layer.
  • Cover the casserole with aluminum foil and bake for 40-45 minutes, or until the potatoes are tender when pierced with a fork.
  • Remove the foil, sprinkle with crushed croutons (if using), and return to the oven to bake for an additional 10-15 minutes until the top is golden and crispy.
  • Once done, let the casserole cool for a few minutes, then garnish with fresh parsley before serving.
