This creamy Cajun Chicken recipe is packed with bold flavors, featuring tender chicken breasts seasoned with Cajun spices, seared to perfection, and simmered in a rich, creamy sauce. Ingredients

  • For the Chicken:
    • 2 boneless, skinless chicken breasts (sliced in half lengthwise)
    • 2 tbsp Cajun seasoning
    • 2 tbsp all-purpose flour
    • 2 tbsp olive oil
  • For the Sauce:
    • 1 (10 oz) can Rotel diced tomatoes with green chilies (juice reserved)
    • 3 garlic cloves, minced
    • 2 tbsp butter
    • 1 tbsp all-purpose flour
    • 1 cup chicken broth
    • ½ cup heavy cream
    • 1 tbsp honey
    • 1 tbsp hot sauce
    • 1 tsp brown sugar
    • ½ tsp mustard powder
    • ½ tsp dried oregano
    • ¼ tsp cayenne pepper (adjust for heat preference)
    • ¼ tsp red pepper flakes
    • 1 cup Cheddar Jack cheese, shredded
    • 1 tbsp lime juice
    • Fresh cilantro, chopped (for garnish)

Instructions

Step 1: Prepare the Chicken

  1. Slice the chicken breasts in half lengthwise for thinner pieces. Season both sides with Cajun seasoning and lightly dredge in flour.

Step 2: Sear the Chicken

  1. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides (about 3-4 minutes per side). Remove and set aside.

Step 3: Build the Sauce

  1. Pour the reserved juice from the diced tomatoes into the skillet, scraping up any browned bits.
  2. Add minced garlic and butter, cooking for about a minute until fragrant.
  3. Sprinkle in flour and cook for an additional minute.
  4. Gradually add chicken broth, heavy cream, honey, hot sauce, brown sugar, mustard powder, dried oregano, cayenne pepper, and red pepper flakes. Stir continuously.

Step 4: Simmer & Finish

  1. Bring the mixture to a gentle boil, then reduce heat and let it simmer uncovered for 5-7 minutes until slightly thickened.
  2. Stir in drained diced tomatoes and reduce heat to low. Slowly add the shredded cheese, stirring until fully melted.
  3. Mix in lime juice and return the seared chicken to the skillet. Spoon sauce over the chicken and simmer for about 5 minutes.

Step 5: Serve & Enjoy

  1. Garnish with chopped fresh cilantro and serve over rice, pasta, or a fresh salad.
