Quick to make and full of fresh herbs and flavors, this pesto is a versatile and delicious addition to any meal. If you love savory, tangy flavors, this unique pesto is sure to become a kitchen staple!

Ingredients

For the Pesto:

  • ¼ cup capers, drained and rinsed
  • 1 cup fresh parsley leaves (or basil, if preferred)
  • ¼ cup Parmesan cheese, grated
  • ¼ cup olive oil
  • 2 tablespoons lemon juice (about ½ lemon)
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste
  • Optional: 1 tablespoon toasted pine nuts or walnuts (for added texture)

Instructions

  1. Prepare the Ingredients:
In a food processor, combine the capers, parsley (or basil), Parmesan cheese, garlic, and lemon juice. If using, add the pine nuts or walnuts for extra texture.

  2. Pulse and Blend:
Pulse the mixture a few times to combine. Gradually add the olive oil while continuing to blend until the pesto reaches your desired consistency. If you prefer a thinner pesto, you can add more oil.

  3. Season and Adjust:
Taste the pesto and add salt and pepper to your preference. If you like a little more acidity, add more lemon juice.

  4. Serve:
Use immediately or transfer the pesto to an airtight container and store in the fridge for up to 3-4 days. For longer storage, drizzle a thin layer of olive oil on top to help preserve the freshness.

Notes

  • Spicy Caper Pesto: Add a pinch of red pepper flakes or a fresh chopped chili pepper for a spicy kick.
  • Vegan Version: Omit the Parmesan cheese and substitute with nutritional yeast for a dairy-free alternative.
  • Herb Swap: Experiment with different herbs like arugula, mint, or dill for a unique flavor profile.
  • Nut-Free: Skip the pine nuts or walnuts to keep the pesto nut-free. You can substitute with more capers for extra flavor.
  • Garlic Lovers: Increase the number of garlic cloves for a more intense garlic flavor.
