Ingredients

  • 16 ounces penne or elbow macaroni
  • 2 cups cooked and shredded chicken breast
  • 22 ounces Alfredo sauce (store-bought or homemade)
  • 8 ounces sour cream
  • 15 ounces ricotta cheese
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley (plus extra for garnish)
  • 2 cups shredded mozzarella cheese

Instructions

Preheat Oven & Cook Pasta:

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish.
  • Cook pasta according to package instructions until al dente. Drain and return to pot.

2. Prepare the Alfredo Mixture:

  • In a large mixing bowl, combine Alfredo sauce, sour cream, ricotta cheese, minced garlic, cooked chicken, eggs, Parmesan cheese, and parsley.
  • Mix until well combined.

3. Assemble the Bake:

  • Fold the cooked pasta into the sauce mixture until evenly coated.
  • Transfer half of the pasta mixture to the baking dish.
  • Sprinkle with 1 cup mozzarella cheese.
  • Add the remaining pasta mixture and top with the remaining 1 cup mozzarella cheese.

4. Bake the Dish:

  • Bake uncovered for 30 minutes, or until cheese is bubbly and golden brown.
  • For a crispier top, broil for 2-3 minutes—watch closely to prevent burning.

5. Serve & Enjoy:

  • Remove from oven and let sit for a few minutes before serving.
  • Garnish with extra parsley if desired.

Notes

  • For a creamier texture, use extra Alfredo sauce or add ½ cup heavy cream to the sauce mixture.
  • No ricotta? Substitute with cottage cheese or a mix of cream cheese and sour cream.
  • To make ahead, assemble the dish up to 24 hours in advance, store in the fridge, and bake when ready.
