Ingredients

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg yolk

For the Cookie Dough:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

Instructions

  • Prepare the Cheesecake Filling: Beat softened cream cheese until smooth. Add sugar, vanilla extract, and egg yolk. Mix until well combined. Chill for 30 minutes.
  • Make the Cookie Dough: Cream together butter, brown sugar, and granulated sugar. Add eggs and vanilla. Mix. In another bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients and stir until just combined. Fold in chocolate chips.
  • Assemble the Cookies: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Flatten a portion of cookie dough, add a teaspoon of chilled cheesecake filling, and wrap the dough around the filling. Place on the baking sheet.
  • Bake: Bake for 12-15 minutes until golden around the edges. Cool for a few minutes before transferring to a wire rack.
  • Serve: Enjoy warm or at room temperature.
