This Cheesy Broccoli recipe features tender broccoli florets coated in a rich, creamy homemade cheese sauce made with real cheddar and Parmesan. A quick and kid-friendly side dish, it’s ready in just 20 minutes and pairs perfectly with chicken, or beef !

Ingredients

For the Broccoli:

  • 4 cups fresh broccoli florets (about 1 large head)
  • Water for steaming

For the Cheese Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour (or gluten-free alternative)
  • 1 cup milk (1% or any type)
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon ground mustard (optional, for depth of flavor)
  • ¼ teaspoon cayenne pepper (optional, for mild heat)
  • Salt and black pepper, to taste

Instructions

Steam the Broccoli:

  • Cut broccoli into even-sized florets for uniform cooking.
  • Bring a pot of water to a boil and place a steamer basket on top.
  • Steam for 5 minutes, or until tender yet crisp. Remove from heat and set aside.

2. Make the Cheese Sauce:

  • In a medium saucepan, melt butter over medium heat.
  • Whisk in flour to create a roux, cooking for 1 minute until slightly golden.
  • Slowly add milk, whisking continuously until smooth and thickened (about 2-3 minutes).
  • Remove from heat and stir in cheddar and Parmesan cheese until melted.
  • Season with ground mustard, cayenne pepper (if using), salt, and black pepper.

3. Combine & Serve:

  • Pour the cheese sauce over the steamed broccoli and toss gently to coat.
  • Serve immediately, garnished with extra shredded cheese or chopped parsley if desired.

Notes

  • For a thinner sauce, add an extra ¼ cup milk.
  • For extra richness, use half-and-half instead of milk.
  • Prevent grainy cheese sauce: Remove from heat before stirring in cheese.
