Ingredients

  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup green onions or chives, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  • Boil the potatoes: Boil the diced potatoes in salted water for 10-15 minutes, or until they are fork-tender. Drain and set aside.
  • Cook the potatoes: In a large skillet, melt butter over medium heat. Add the boiled potatoes and cook for 5-7 minutes, or until golden and slightly crispy.
  • Scramble the eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the potatoes in the skillet. Stir gently to scramble the eggs with the potatoes, cooking for about 5 minutes.
  • Melt the cheese: Sprinkle shredded cheddar cheese over the eggs, cover, and cook for another 2-3 minutes until the cheese is melted.
  • Garnish and serve: Garnish with chopped green onions or chives before serving.

Notes

  • Vegetable Add-ins: For extra flavor and nutrition, try adding bell peppers, spinach, or mushrooms to the scramble.
  • Cheese Variations: Swap the cheddar cheese for Swiss, pepper jack, or even feta cheese for a different taste.
  • Spicy Option: Kick up the heat by adding cayenne pepper, hot sauce, or diced jalapeños.
  • Make it Vegan: Use non-dairy milk, substitute eggs with a vegan egg replacement like tofu scramble, and skip the cheese or use vegan cheese.
  • Healthier Version: Use less butter, skip the meat, and opt for lower-fat cheese to make the dish healthier.
