Classic Cherry Delight is a creamy, no-fail dessert that layers a buttery graham cracker crust, fluffy cream cheese filling, and tangy cherry topping. Perfect for gatherings, potlucks, or family dinners, this versatile treat is a crowd favorite.

 

Ingredients

  • 4 cups pitted cherries (fresh or thawed from frozen)
  • 1/2 cup (100g) sugar
  • 1/2 cup (120ml) water
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

For the Graham Cracker Crust:

  • 24 graham crackers
  • 3/4 cup (170g) melted salted butter
  • 2 tbsp sugar

For the Cream Layer:

  • 1 cup (240ml) heavy whipping cream
  • 1/2 cup (100g) sugar
  • 1 tsp vanilla extract
  • 1 package (8oz) softened cream cheese
  • 1/2 cup (100g) sugar

Instructions

Prepare the Cherry Topping:

  • Combine cherries, sugar, water, lemon juice, and cornstarch in a saucepan.
  • Stir well, heat over medium-high, and bring to a boil.
  • Lower the heat and simmer for 10 minutes, stirring, until thickened.
  • Cool completely in the refrigerator for 1-2 hours.

2. Prepare the Graham Cracker Crust:

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch pan.
  • Pulse graham crackers in a food processor until fine.
  • Mix crumbs with melted butter and sugar; press into pan.
  • Bake for 10 minutes, then cool.

3. Prepare the Cream Layer:

  • Whip heavy cream, sugar, and vanilla until stiff peaks form.
  • Beat cream cheese and sugar in another bowl until smooth.
  • Fold whipped cream into cream cheese mixture.

4. Assemble:

  • Spread cream layer evenly over the cooled crust.
  • Top with chilled cherry topping.
  • Refrigerate for 2+ hours before serving.

5. Serve:

  • Slice into squares and serve chilled.

  • For variations, swap cherries with other fruits like strawberries or blueberries.
  • Use store-bought cherry pie filling for a quicker option.
