Ingredients

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 cups broccoli florets
  • 2 teaspoons cornstarch
  • 2 teaspoons ginger, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 cup chicken broth, divided
  • 3 tablespoons soy sauce
  • 2 teaspoons sugar

Instructions

  • Prepare Ingredients:
    • Cut the chicken breast into bite-sized pieces.
    • Finely chop the garlic and ginger.
    • Measure out the broccoli florets and set aside.
  • Cook the Chicken:
    • Spray a 12-inch non-stick skillet with cooking spray and heat over medium-high heat.
    • Add the chicken, garlic, and ginger to the skillet.
    • Stir-fry for 2-3 minutes until the chicken is browned on all sides.
  • Add the Sauce:
    • Pour in ¾ cup chicken broth, soy sauce, and sugar. Stir well to combine.
    • Cover and cook over medium heat for 5 minutes, stirring occasionally.
  • Cook the Broccoli:
    • Add the broccoli florets to the skillet.
    • Cover again and cook for 5 more minutes, stirring occasionally, until the chicken is fully cooked and the broccoli is tender-crisp.
  • Thicken the Sauce:
    • In a small bowl, mix cornstarch with the remaining ¼ cup chicken broth.
    • Stir into the skillet and cook, stirring frequently, until the sauce thickens.
  • Serve & Enjoy:
    • Serve hot over steamed rice or noodles.
