Ingredients

For the Chicken Fried Steak:

  • 4 beef cube steaks (about pound each)
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 eggs
  • ¼ cup milk
  • Vegetable oil for frying

For the Gravy:

  • 2 tablespoons reserved frying oil
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • Salt and black pepper to taste

Instructions

  • Prepare the Coating Mixtures:

    • In a shallow dish, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper.
    • In another dish, whisk together the eggs and ¼ cup milk.
  • Bread the Steaks:

    • Dip each steak into the seasoned flour mixture, coating evenly.
    • Dip the steak into the egg mixture.
    • Coat the steak again in the flour mixture, pressing lightly to help the breading adhere.
  • Fry the Steaks:

    • Heat about ½ inch of vegetable oil in a large skillet over medium-high heat.
    • Once hot, carefully place the steaks in the skillet and fry for about 4 minutes per side, or until golden brown and crispy.
    • Remove the steaks from the pan and place them on a wire rack or paper towels to drain. Keep warm while making the gravy.
  • Make the Gravy:

    • Reduce the heat to medium and remove all but 2 tablespoons of frying oil from the skillet.
    • Stir in the 2 tablespoons of flour and whisk until smooth, cooking for about 1 minute.
    • Gradually whisk in the 2 cups of milk, scraping up any browned bits from the pan.
    • Cook and stir for about 5 minutes, or until the gravy thickens.
    • Season with salt and black pepper to taste.
  • Serve:

    • Place the fried steaks on a plate and generously pour the gravy over the top.
    • Serve immediately with mashed potatoes, biscuits, or green beans.
