Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup all-purpose flour (or gluten-free flour blend)
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp butter
  • ½ cup lemon juice (freshly squeezed recommended)
  • ½ cup chicken broth
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 3 tbsp capers, drained
  • 2 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions

  • Prepare the Chicken:
    • In a shallow dish, mix flour, salt, and black pepper.
    • Dredge chicken breasts in the flour mixture, shaking off excess.
  • Sear the Chicken: (Optional but recommended for extra flavor)
    • Heat a skillet over medium-high heat, melt butter, and sear chicken for about 2 minutes per side until golden brown.
  • Assemble in the Slow Cooker:
    • Place the browned chicken in the slow cooker.
    • In a bowl, whisk together lemon juice, chicken broth, Dijon mustard, and garlic.
    • Pour the mixture over the chicken and sprinkle with capers.
  • Cook:
    • Cover and cook on low for 4 hours or until the chicken is tender.
  • Thicken the Sauce:
    • Remove chicken and set aside.
    • Mix cornstarch and water to make a slurry, then stir into the sauce.
