Chicken Satay is a flavorful Southeast Asian dish featuring marinated, skewered, and grilled chicken with a rich peanut-infused marinade. Perfect as an appetizer or main course, these juicy, smoky skewers are easy to make and pair perfectly with peanut sauce, jasmine rice, or a fresh cucumber salad.

Ingredients

  • 2 tablespoons creamy peanut butter
  • ½ cup soy sauce
  • ½ cup lime or lemon juice (adjust to taste)
  • 1 tablespoon brown sugar
  • 2 tablespoons curry powder
  • 2 cloves garlic, chopped
  • 1 teaspoon hot pepper sauce
  • 6 skinless, boneless chicken breast halves, cubed
  • 12 wooden skewers, soaked in water for 15 minutes

Instructions

  • Prepare the Marinade:

    • In a bowl, mix peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic, and hot pepper sauce until smooth.
  • Marinate the Chicken:

    • Add cubed chicken to the marinade, ensuring all pieces are evenly coated.
    • Cover and refrigerate for 2 to 4 hours.
  • Preheat the Grill:

    • Set an outdoor grill to high heat and lightly oil the grate.
  • Thread the Chicken:

    • Remove chicken from the marinade, shaking off excess.
    • Thread onto soaked wooden skewers. Discard leftover marinade.
  • Grill the Skewers:

    • Cook on the preheated grill for about 5 minutes per side until fully cooked.
  • Serve:

    • Enjoy hot with peanut sauce, jasmine rice, or a fresh cucumber salad.
