These Chocolate Mascarpone Brownies are a rich and decadent twist on classic brownies, featuring a moist, fudgy texture and a silky chocolate ganache topping. The addition of mascarpone cheese makes them extra creamy, perfect for chocolate lovers and special occasions!

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 3 oz semisweet chocolate, chopped
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • ½ cup mascarpone cheese, at room temperature
  • 3 large eggs, at room temperature
  • 2 tsp vanilla extract
  • ½ cup all-purpose flour
  • ¼ tsp salt

    For the Ganache:

    • 6 oz semisweet chocolate, chopped
    • 6 tbsp heavy whipping cream
    • 3 tbsp unsalted butter

Instructions

Preheat & Prepare the Pan

  • Preheat your oven to 325°F (163°C).
  • Butter an 8-inch square baking pan and line it with parchment paper.

2. Melt Chocolate & Butter

  • Place the chopped chocolate in a mixing bowl.
  • In a small saucepan (or microwave), melt the butter until just melted (not bubbling).
  • Pour the melted butter over the chocolate and let sit for 30 seconds, then stir until smooth.

3. Mix Dry Ingredients

  • Sift sugar and cocoa powder into the chocolate mixture and stir.

4. Add Wet Ingredients

  • Beat in mascarpone cheese, eggs, and vanilla extract until smooth.

5. Fold in Flour & Salt

  • Gently fold in flour and salt until just combined. Avoid overmixing.

6. Bake

  • Pour batter into the prepared pan and spread evenly.
  • Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the brownies cool for 10-15 minutes before adding ganache.

7. Prepare Ganache

  • Heat the heavy cream in a saucepan until it just begins to simmer.
  • Remove from heat, add chopped chocolate and butter, and let sit for a few minutes.
  • Whisk until smooth and glossy.

8. Apply Ganache & Set

  • Pour the ganache over the slightly cooled brownies, spreading evenly.
  • Allow the ganache to set completely before slicing into squares.

Notes

Nutty Addition – Fold in chopped walnuts or pecans for added crunch.
Espresso Kick – Add 1 tsp instant espresso powder for a deep chocolate flavor.
Fruit Twist – Mix in dried cherries or raspberries for a fruity contrast.
White Chocolate Drizzle – Drizzle melted white chocolate over the set ganache.
