Ingredients

  • 200g cream cheese, softened
  • 60g unsalted butter
  • 100ml whole milk
  • 6 large eggs, separated
  • 100g granulated sugar
  • Zest of 2 oranges
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 70g cake flour
  • 30g cocoa powder
  • ¼ teaspoon salt
  • 150g dark chocolate, melted
  • Fresh citrus fruits (orange segments, grapefruit slices) for garnish

Instructions

  • Preheat the Oven:

    • Preheat the oven to 320°F (160°C) and line the base and sides of an 8-inch round cake pan with parchment paper.
  • Make the Chocolate Mixture:

    • In a double boiler, melt dark chocolate, butter, and milk until smooth. Allow it to cool slightly, then stir in orange zest, orange juice, and vanilla extract.
  • Incorporate the Cream Cheese:

    • Add softened cream cheese to the cooled chocolate mixture and beat until smooth and creamy.
  • Mix the Egg Yolks:

    • Whisk egg yolks with sugar until pale and fluffy. Add the chocolate-citrus-cream cheese mixture and blend until smooth.
  • Add Dry Ingredients:

    • Sift in cake flour, cocoa powder, and salt. Gently fold into the batter until combined.
  • Whip the Egg Whites:

    • Whip egg whites until stiff peaks form. Carefully fold them into the chocolate-orange batter to maintain a light texture.
  • Bake the Cake:

    • Pour the batter into the prepared pan and tap it to release air bubbles. Bake for 60-70 minutes or until the top is set.
  • Cool the Cake:

    • Let the cheesecake cool in the oven with the door slightly ajar. Refrigerate for a few hours or overnight before serving

Notes

  • Chocolate Lovers: Add extra melted chocolate to the batter for an even richer flavor.
