Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour

For the topping (optional):

  • Fresh fruit or fruit preserves (e.g., strawberry or blueberry)

Instructions

  • Prepare the crust: Preheat your oven to 325°F (165°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  • Prepare the filling: In a large mixing bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and continue mixing. Add eggs one at a time, mixing well after each addition. Stir in sour cream and flour until fully combined.
  • Assemble and bake: Pour the cream cheese filling into the cooled crust and spread evenly. Bake for 55-60 minutes or until the edges are set, and the center slightly jiggles when gently shaken.
  • Cool and chill: Turn off the oven and let the cheesecake cool in the oven for 1 hour to prevent cracking. Afterward, remove it from the oven and allow it to cool at room temperature for 30 minutes. Refrigerate for at least 4 hours or overnight to fully set.
  • Serve: Before serving, top with fresh fruit or fruit preserves if desired. Slice and enjoy!

Notes

  • For added crunch, mix crushed nuts into the graham cracker crust.
  • For a citrus twist, add lemon or lime zest to the filling.
  • Make it gluten-free by substituting the graham crackers with gluten-free alternatives.
