Monster Cookie Dough Brownies are the ultimate dessert, combining fudgy brownies, vibrant peanut butter cookie dough, and a rich chocolate ganache. Topped with mini M&Ms and chocolate chips, this decadent treat delivers a delightful blend of textures and flavors in every bite. Ingredients

Brownie Layer:

  • 1 box brownie mix (and ingredients called for on the box)

Monster Cookie Dough Layer:

  • 1/3 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 2/3 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup quick cook oats
  • 1/3 cup mini semisweet chocolate chips
  • 1/3 cup mini M&Ms

Chocolate Ganache Layer:

  • 4 ounces semisweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  • Prepare the Brownie Base:
    Preheat the oven and line an 8-inch square baking pan with parchment paper. Spray with nonstick cooking spray.
    Prepare and bake the brownies according to the package instructions. Let cool completely.
  • Make the Cookie Dough:
    In a stand mixer, cream together butter, brown sugar, and peanut butter until light and fluffy.
    Add vanilla extract and salt. Gradually mix in flour and oats, then fold in chocolate chips and M&Ms.
  • Assemble the Layers:
    Spread the cookie dough evenly over the cooled brownies.
  • Make the Ganache:
    Heat heavy cream until it just begins to boil, then pour over chocolate chips. Let sit for 5 minutes, then whisk until smooth.
  • Finish:
    Pour the ganache over the cookie dough layer and refrigerate until set.

Notes

  • For a gluten-free version, use certified gluten-free flour and other gluten-free ingredients.
  • For extra crunch, add crushed peanuts or pretzels to the cookie dough layer.
  • If you prefer, you can skip the ganache and top with frosting instead.
