Ingredients

  • 1 can whole kernel corn, drained
  • 2 eggs
  • Salt & pepper, to taste
  • ½ cup flour
  • 1 tsp baking powder
  • ½ cup shredded cheese
  • 1 pat butter
  • 2 tbsp oil
  • ¼ cup chopped parsley

  1. Prepare the Corn: Drain the canned corn and discard the liquid.
  2. Mix the Batter: In a bowl, beat the eggs with salt and pepper. Add the flour and baking powder, whisking until smooth.
  3. Add Corn and Cheese: Stir in the drained corn and shredded cheese until well combined.
  4. Heat Butter and Oil: In a frying pan, heat butter and oil over medium heat until hot.
  5. Fry the Fritters: Drop spoonfuls of the batter into the pan. Cook until golden brown on one side, then flip and cook the other side until crispy.
  6. Drain and Serve: Remove the fritters and drain on paper towels. Serve hot, garnished with chopped parsley.
