This Cottage Cheese Bread is a high-protein, gluten-free alternative to traditional bread. Combining the creaminess of cottage cheese with the wholesome goodness of oat flour and eggs, it’s a versatile and nutritious choice for breakfast, snacks, or sandwiches. Customize with herbs or cheese for added flavor!

Ingredients

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 1 cup oat flour (or ground oats for homemade oat flour)
  • ½ cup shredded cheese (cheddar or mozzarella for a cheesy flavor)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (optional, for flavor)
  • Fresh or dried herbs (such as rosemary or thyme, optional)

Instructions

  • Prepare the Cottage Cheese Mixture:
    • In a large bowl, combine cottage cheese and eggs. Use a whisk or hand mixer to blend until smooth.
  • Mix Dry Ingredients:
    • In a separate bowl, combine oat flour, baking powder, baking soda, salt, and garlic powder (if using).
  • Combine Wet and Dry Mixtures:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Add Shredded Cheese and Herbs:
    • Gently fold in the shredded cheese and herbs (if using) until evenly distributed throughout the batter.
  • Prepare the Baking Pan:
    • Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  • Bake the Bread:
    • Pour the batter into the prepared loaf pan, smoothing the top.
    • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
    • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
