Ingredients

  • 1 cup cottage cheese (blended for a smoother texture)
  • 2 large eggs
  • ¼ cup honey or maple syrup
  • ¼ cup olive oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour (or all-purpose flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon (optional, for flavor)
  • ½ cup mix-ins (chocolate chips, berries, banana, nuts, etc.)

Instructions

  • Preheat & Prep:
    • Preheat oven to 350°F (175°C).
    • Line or grease a muffin tin.
  • Blend Cottage Cheese (Optional):
    • For a smoother texture, blend cottage cheese until creamy.
  • Mix Wet Ingredients:
    • In a bowl, whisk together cottage cheese, eggs, honey/maple syrup, oil, and vanilla extract.
  • Combine Dry Ingredients:
    • In another bowl, whisk flour, baking powder, baking soda, and cinnamon.
  • Mix Batter:
    • Gradually stir dry ingredients into wet ingredients until just combined.
