Cowboy Mushrooms are a savory, buttery, and herb-infused dish that brings out the deep, rich flavors of mushrooms with Dijon mustard, garlic, and fresh herbs. Perfect as a side dish, topping for burgers or steaks, or a vegetarian main course, these mushrooms pack bold flavors with minimal effort.

Ingredients

  • 1 lb white button mushrooms, sliced
  • 1 stick (½ cup) unsalted butter
  • 1 tbsp Dijon mustard
  • 12 tbsp fresh chives, chopped
  • 12 tbsp fresh parsley, chopped
  • 12 tbsp fresh thyme, chopped
  • 34 cloves garlic, minced
  • 1 tsp lemon juice
  • 1 tsp paprika
  • ⅛ tsp cayenne pepper (optional, for heat)
  • ⅛ tsp crushed red pepper flakes (optional, for spice)
  • Salt & freshly ground black pepper, to taste

Instructions

Prepare the Mushrooms:

  • Clean mushrooms by wiping with a damp paper towel (avoid soaking in water).
  • Slice mushrooms into uniform thickness for even cooking.

2. Make the Cowboy Butter:

  • In a small bowl, mix together:
    • Softened butter, Dijon mustard, chives, parsley, thyme, garlic, lemon juice, paprika, cayenne pepper (if using), and red pepper flakes (if using).
  • Stir until well combined.

3. Cook the Mushrooms:

  • Heat a large skillet over medium heat.
  • Add the cowboy butter, allowing it to fully melt.
  • Add sliced mushrooms, stirring to coat evenly in the butter mixture.
  • Sauté for 20-22 minutes, stirring occasionally, until mushrooms are golden brown and tender.

4. Season & Serve:

  • Season with salt and black pepper, adjusting to taste.
  • Transfer to a serving dish and enjoy immediately as a side dish, topping, or main course.
