Ingredients

For the Biscuits:

  • 1 package Cheddar Bay Biscuit Mix
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

For the Crab Filling:

  • 1 pound lump crab meat, fully cooked
  • ¼ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ cup mayonnaise
  • 1 tablespoon mustard
  • ½ sleeve Ritz crackers, crushed
  • 1 cup grated Parmesan cheese

For the Lemon Butter Glaze:

  • ½ stick (4 tablespoons) unsalted butter, melted
  • 1 tablespoon lemon juice

Instructions

Prepare the Biscuit Dough:

  • Preheat oven to 375°F (190°C).
  • Lightly grease two muffin tins with nonstick spray.
  • In a mixing bowl, combine Cheddar Bay Biscuit Mix, garlic powder, and Italian seasoning. Follow package instructions to prepare the biscuit dough. Set aside.

2. Make the Crab Filling:

  • In a separate bowl, mix together lump crab meat, paprika, onion powder, mayonnaise, mustard, crushed Ritz crackers, and Parmesan cheese until well combined.

3. Assemble the Stuffed Biscuits:

  • Dust your hands with flour to prevent sticking.
  • Take a portion of the biscuit dough and flatten it into a small circle in your palm.
  • Place a spoonful of crab filling in the center of the dough circle.
  • Fold the edges over the filling, pinching to seal and form a ball.
  • Place each stuffed ball into the prepared muffin tins.

4. Bake the Biscuits:

  • Bake in the preheated oven for 12-15 minutes, or until golden brown.

5. Make the Lemon Butter Glaze:

  • While the biscuits bake, melt the butter and stir in the lemon juice.

6. Glaze and Serve:

  • Once the biscuits are baked, remove them from the oven and immediately brush the tops with the lemon butter glaze.
  • Serve warm and enjoy!

Notes

  • For extra flavor, add fresh herbs like dill or chives into the crab mixture.
  • For a crispy crust, broil the biscuits for the last 2-3 minutes of baking.
  • To prevent soggy biscuits, avoid overloading the crab filling with too much mayo or liquid ingredients.
