1 lb (450g) chicken tenders (or chicken breasts, cut into strips)
1 packet ranch seasoning mix (or homemade ranch seasoning)
1/2 cup cream cheese, softened
1/2 cup shredded cheddar cheese
1 tablespoon olive oil or melted butter
Salt and pepper, to taste
Instructions:
Prepare the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Chicken Tenders:
Pat the chicken tenders dry and season with salt and pepper.
Make the Creamy Ranch Mixture:
In a bowl, mix together softened cream cheese, shredded cheddar cheese, ranch seasoning, and olive oil or melted butter. Mix until smooth.
Coat the Chicken Tenders:
Dip each chicken tender into the creamy ranch mixture, coating evenly, and place them on the prepared baking sheet. Optionally, sprinkle more cheddar cheese on top for extra cheesiness.
Bake the Tenders:
Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C), and the coating is golden brown and bubbly.
Serve:
Once done, remove from the oven and let rest for a couple of minutes. Garnish with chopped green onions, if desired, and serve with dipping sauces.
Variations:
Spicy Crack Chicken Tenders: Add cayenne pepper or hot sauce to the ranch mixture for a spicy twist.
BBQ Crack Chicken Tenders: Drizzle BBQ sauce on the tenders before baking for a smoky flavor.
Crispy Coating: For extra crunch, dip tenders in breadcrumbs or crushed crackers after coating in the ranch mixture.
Storage:
Store leftovers in an airtight container in the refrigerator for up to 3 days
