Ingredients

  • 2 tablespoons butter, divided

  • ½ teaspoon rosemary
  • ½ teaspoon basil
  • ¼ teaspoon ground fennel

  • 3 tablespoons cream cheese
  • 1 cup milk (or buttermilk for a tangier twist)
  • 1 cup basmati rice (uncooked)
  • Optional: 1 clove garlic, minced

Instructions

  1. Cook the Rice:

    • Begin by cooking the basmati rice according to the package instructions. Set aside to keep warm.
  2. Season the Chicken:

    • In a bowl, mix the chicken pieces with paprika, cumin, oregano, crushed chilies, salt, and pepper until evenly coated.
  3. Cook the Chicken:

    • In a large pan, melt 1 tablespoon of butter over medium heat.
    • Add the seasoned chicken pieces and cook for about 6-8 minutes, until browned on all sides and cooked through.
    • Remove the chicken from the pan and set it aside.
  4. Prepare the Pan:

    • If there’s excess fat in the pan, drain it off, but leave the browned bits and a little butter for flavor.
  5. Make the Sauce:

    • In the same pan, add the remaining butter.
    • If using, sauté minced garlic for 30 seconds until fragrant.
