Creamy Mushroom Spinach Pasta is a rich, comforting dish that combines creamy sauce, savory mushrooms, and fresh spinach, all tossed with your favorite pasta. Ingredients

  • 12 oz spaghetti (or your choice of pasta)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach leaves
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  • Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, or until they are golden and have released their moisture.
  • Add the Spinach: Stir in the spinach leaves and cook for 2-3 minutes until they are wilted.
  • Make the Creamy Sauce: Lower the heat and add the heavy cream and Parmesan cheese. Stir until the sauce is creamy and the cheese is melted. Season with salt and pepper to taste.
  • Combine Pasta & Sauce: Add the cooked pasta to the skillet and toss it in the creamy sauce until well coated.
  • Serve: Serve the pasta warm, garnished with additional Parmesan cheese if desired.
