Ingredients

  • 1 lb chicken breasts or chicken tenders, cut into strips
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs or regular breadcrumbs
  • ½ cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray for coating

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. If using chicken breasts, cut them into strips (about 1-inch wide).
  3. In a bowl, beat the eggs. In another bowl, mix the panko breadcrumbs, Parmesan cheese (if using), garlic powder, paprika, onion powder, salt, and pepper.
  4. Season the chicken strips with a pinch of salt and pepper.
  5. Dip each chicken strip into the egg mixture, then coat with the breadcrumb mixture. For extra crunch, repeat the egg and breadcrumb process.
  6. Place the breaded chicken tenders on a lined baking sheet, leaving space between each.
  7. Lightly spray with olive oil and bake for 20-25 minutes, flipping halfway through. Ensure the chicken reaches an internal temperature of 165°F.
  8. Let the chicken rest for a few minutes before serving.

  • For an extra kick, add cayenne pepper to the breadcrumb mixture.
  • Use crushed cornflakes for an alternative crunchy coating.
