These Crispy Turkey Flautas are a delicious way to transform leftover turkey into a golden, crunchy Mexican-inspired dish. Stuffed with shredded turkey, pepper Jack cheese, and green onions, these flautas are quick to make and perfect as an appetizer, snack, or main course. Serve with guacamole, salsa, and sour cream for a crowd-pleasing meal!

Ingredients

  • 1 pound cooked, shredded turkey
  • 6 ounces shredded pepper Jack cheese
  • ⅓ cup chopped green onions
  • Salt and black pepper, to taste
  • 24 small white corn tortillas
  • 1 egg white (optional, for sealing)
  • ¾ cup shredded Napa cabbage
  • ¾ cup guacamole
  • ¾ cup sour cream
  • ¾ cup salsa
  • ¼ cup chopped fresh cilantro
  • Oil, for frying

Instructions

Prepare the Filling:

  1. In a bowl, combine shredded turkey, cheese, and green onions.
  2. Season with salt and black pepper to taste.

Warm the Tortillas:

  1. Wrap a stack of tortillas in a damp paper towel and place them in a microwave-safe plastic bag (leave partially open).
  2. Microwave on high for 45 seconds until warm and pliable.

Assemble the Flautas:

  1. Place 2 tablespoons of the turkey mixture onto the lower third of each tortilla.
  2. Tightly roll the tortilla around the filling.
  3. Seal with egg white or secure with a toothpick (optional).

Fry the Flautas:

  1. Heat 1 inch of oil in a skillet over medium-high heat.
  2. Place flautas seam-side down in the hot oil.
  3. Fry in batches, turning occasionally, until golden brown and crispy (about 2-3 minutes per side).
  4. Transfer to a paper towel-lined plate to drain excess oil.

Serve:

  1. Garnish with shredded cabbage, guacamole, sour cream, salsa, and cilantro.
  2. Serve hot and enjoy!
