Ingredients

  • 46 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon Italian seasoning
  • Fresh parsley and extra Parmesan for garnish

Instructions

  1. Prepare the Chicken:
    • Pat chicken breasts dry and season both sides with salt, pepper, oregano, and thyme.
    • Heat olive oil in a skillet over medium heat and sear chicken for 2–3 minutes per side until golden brown.
  2. Make the Sauce:
    • In the same skillet, sauté garlic for 30 seconds.
    • Deglaze the pan with chicken broth, scraping up browned bits.
    • Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, red pepper flakes (if using), and Italian seasoning. Simmer for 2–3 minutes to thicken slightly.
  3. Assemble in the Slow Cooker:
    • Place seared chicken in the crock pot.
    • Pour the sauce over the chicken, ensuring even coverage.
    • Cook on low for 4–6 hours or high for 2–3 hours.
  4. Garnish and Serve:
    • Transfer chicken to a serving platter and pour the sauce over the top.
    • Garnish with fresh parsley and extra Parmesan cheese. Serve warm.
