Ingredients

  • 46 chicken breasts
  • 1 cup packed brown sugar
  • 2/3 cup vinegar (apple cider vinegar works great)
  • 1/4 cup lemon-lime soda (diet or regular)
  • 23 tablespoons minced garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh ground pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Red pepper flakes (optional)

Instructions

  • Prepare the Slow Cooker: Spray your slow cooker with non-stick cooking spray.
  • Place Chicken in Cooker: Add the chicken breasts (fresh, thawed, or frozen) into the slow cooker.
  • Make the Sauce: In a bowl, mix together the brown sugar, vinegar, lemon-lime soda, garlic, soy sauce, and pepper. Pour the sauce over the chicken.
  • Cook: Cover and cook on low for 6-8 hours or high for 4 hours, until the chicken is cooked through and tender.
  • Make the Glaze: Once the chicken is done, remove it from the slow cooker. Pour the remaining sauce into a saucepan over high heat.
  • Thicken the Sauce: In a small bowl, mix the cornstarch and water until smooth. Pour it into the saucepan with the sauce and stir well. Let it come to a boil and cook for 2-3 minutes, until it thickens into a glaze.
  • Serve: Serve the chicken with the thickened sauce over rice, noodles, or mashed potatoes. Garnish with red pepper flakes for extra spice.
