Crockpot Chicken & Stuffing is the ultimate comfort meal that requires minimal effort but delivers maximum flavor. Tender chicken breasts, creamy soup, tangy sour cream, and fluffy stuffing come together in a slow cooker for a delicious, one-pot dinner. Paired with green beans, this dish is perfect for busy weeknights or meal prepping.

Ingredients

  • 1 (10.5 ounce) can of cream of chicken soup
  • 1 (6 oz) box of stuffing mix
  • 8 oz sour cream (1 cup)
  • ¾ cup of water
  • 1 (16 oz) bag of frozen green beans
  • 34 large salted and peppered chicken breasts

Instructions

  • Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot.
  • Make the Sauce: In a bowl, combine the cream of chicken soup, sour cream, stuffing mix, and half of the water. Mix well.
  • Pour Over Chicken: Pour the mixture evenly over the chicken breasts in the crockpot.
  • Add Green Beans: Add the frozen green beans to the crockpot. Pour the remaining water over the entire mixture.
  • Cook: Set the crockpot to high and cook for 4 hours, or cook on low for 6 to 7 hours.
  • Mix Periodically: Stir the stuffing occasionally to keep it moist and evenly seasoned. You can place the green beans on the side of the crockpot if you prefer them separate.
  • Serve: Once the chicken is tender and the stuffing has absorbed all the flavors, serve and enjoy!

Notes

  • Substitute rotisserie chicken for quicker prep—add it in the last hour of cooking.
  • Experiment with other veggies like broccoli or peas for variety.
